Cowboy Coffee

It’s basically three steps:

• Boil your water and remove from the fire.

• Add 2 to 3 tablespoons of perk-ground coffee per cup of water.

• Let it steep for 4 to 5 minutes before drinking.

The grounds usually settle by then.

If they don’t add a splash of cold water, which sinks and carries most of the grounds to the bottom of the pot.

A few grounds remain in the bottom of each cup. But; that's the nature of any unfiltered coffee.

Keep the pot close to the edge of the fire to keep it warm enough to drink. Don't put directly over the fire to cause scorching.

So; brew up a pot, pardner' and enjoy the sunrise.

ARIOSA Brisket

Ingredients

3 cups Ariosa Coffee brewed extra strength

4 pounds Choice brisket of beef

4 cloves garlic, slivered

4 cloves garlic, crushed

4 large Vidalia onions, thinly sliced

1/2 cup of fresh Basil cut in 1/4 inch strips

1/2 cup of Parsley chopped medium

1/2 cup of Dill leaves stripped from stalk

1 cup apple cider vinegar

2 Tbsp bacon fat or lard

salt and pepper, to taste

Instructions

With a knife, make slits in the meat and insert the slivers of garlic. In a bowl big enough to accommodate the brisket, cover the bottom with a layer of sliced onions. Place the meat in the bowl, and rub the crushed garlic over the brisket. Mix the vinegar with the Basil, Parsley & Dill, and pour over the brisket. Add one cup of Ariosa Coffee. Marinate for 6 hours or overnight in the refrigerator, turning several times. When you are ready to cook, preheat the oven to 350 degrees F. Heat the lard or bacon fat in a deep, heavy skillet large enough to hold the brisket. Take the brisket from the marinade, and pat dry with paper towels. Brown the meat well on all sides in the skillet. Place the brisket on a cutting board. In the fat remaining in the skillet, sauté' the remaining sliced onions until caramelized. Pour in 1 cup Ariosa Coffee. Bring to a boil, stirring and scraping the bottom of the skillet to loosen the browned bits. Spread the onions and liquid from the skillet in a roasting pan. Place the brisket on the onions. You can add some split Celery stalks or carrots to the roasting pan for variety. Pour in the remaining cup of Ariosa Coffee, and season with salt and freshly ground pepper. Cover tightly with lid and place in oven for 1/2 hour. Turn the oven down to 250 degrees F and bake for an approximately 2 hours or until meat at 180 degrees. Take the brisket from the oven and allow to rest for 30 minutes. Slice the brisket thinly against the grain. Use the pan liquid to make a gravy or pour over the sliced meat for added moisture. Serve as soon as sliced or refrigerate for later use. Note: You can also utilize a roasting bag for this recipe, it makes for a controlled cooking and quick clean up.

ORGANIC COFFEE AVOCADO SHAKE

This is a variation of a drink indigenous to Indonesia

Ingredients

1/2 cup Organic Espresso or 1/2 cup Organic French Roast Sumatra coffee, Chilled

1/2 large Ripe Organic avocado

1/2 cup Organic Half & Half Cream

2 cups Organic Ice Cream (vary flavors to create new drinks)

2 teaspoons Organic Tahitian Vanilla Extract

2 tablespoons Organic Chocolate Syrup

Garnish by floating 3 dark roasted Organic coffee beans on top

Optional: add ½ teaspoon of Organic Ginger to add tartness

Or

add 1 teaspoon of Organic Sugar to sweeten

Or

substitute Organic Yogurt for ice cream (Plain or with fruits)

Or if you don’t believe me

Substitute ½ cup of Wild Organic Blueberries for the Organic Avacado

Trust Me, you’ll love it! The Avocado adds tremendous body to the drink

Preparation

Brew coffee the day before & place in sealed container in refrigerator. Split avocado in halves. Spoon avocado flesh into a blender. Add remaining ingredients. Use purée speed until completely smooth, no more than 90 seconds. Serve in a chilled glass
