Q: Could you please provide me with some background about Tea Decaffeination and the processes by which your teas are decaffeinated?

A: Tea from the Camellia Sinensis family contains from 1.6% caffeine in Formosa broken leaf to 4%-4.5% in most other types. According to the U.S. Food and Drug Administration, 97% of the caffeine content must be removed in order to label the tea decaffeinated.

There are two sources of decaffeinated tea in the world, both processed by firms in Europe. Our decaf teas are processed in a plant in Bern, Switzerland.

Our most commonly used decaf tea is Ceylon BOP Ethyl Acetate (EA). Ethyl Acetate is derived as a result of the reaction between ethanol and acitit acid. The raw materials are taken from natural origins, such as fruit. The maximum carrier residue for this tea is one ppm or less, with a maximum caffeine residue of .08% (dry weight).

Our CO2 decaf tea begins with a base of Ceylon OP. Supercritical Carbon Dioxide is an odorless, tasteless and inert gas. CO2 processing leaves no toxic residues. In addition, extraction of the caffeine takes place at room temperature, which protects product quality by preventing the breakdown of temperature-sensitive components. After extraction occurs, the supercritical fluid turns back into a gas, so no solvent residue remains.

The decaffeination processes run under normal official food control and fully comply with the Swiss and European food laws.

Q: Your home page mentions a "dry-roast" process. What exactly is that?

A: Most roasting companies, both micro and commercial, utilize what is commonly termed as a "quench" cycle during the roasting process. It involves spraying the upper portion of the roast chamber with water through the use of fine spray nozzles. This step takes place once the beans have reached the desired temperature and its original intention was to help control temperature fluctuations. During this process, the water and the beans come in contact with each other. Water, along with air, are two of fresh coffees natural enemies because both accelerate the aging process, leading to stale coffee. The water mutes and in some cases, detracts, from the naturally occurring flavors developed during the roasting process. Since our roasting procedures do not involve water, we say we use a "Dry-Roast" process. We have been implementing this technique for seven years and it does make a difference!

Q: There are different roast profiles available ranging from "light" to "dark." Where does Arbuckle Coffee fall within that realm?

A: We can easily accommodate all flavor profiles, but in our estimation, we are more inclined toward the category of a "dark" roaster. Unless otherwise noted, the coffees we offer are what we call a "Full City" roast. When this flavor profile is achieved, we feel that we have developed the bean beyond a "green" or "under ripe" taste, but we have not added any of the smoky or dry characteristics usually associated with darker roasts. Simply stated, we have developed the bean to its individual flavor potential.

Q: What type of coffee roaster do you use?

A: We proudly use what is called a "Fluid Bed Roaster." The name is derived from the fact that the beans are circulated on a fluid bed of hot air. This allows for a very uniform, even roast where the flavor qualities are fully revealed.

Q: What is the best way to store coffee?

A: We recommend that coffee which will not be consumed immediately be stored in the freezer, in either an airtight container or in the bag in which you received it. Freezing coffee dramatically slows the aging process and will allow you to store unused coffee for months. Optimum brewed-coffee flavor is achieved by allowing freezer-stored coffee to return to room temperature before grinding and brewing.

SHIPPING/DELIVERY

Q: Could you please provide me with a little more information about the shipping services you offer?

A: The only delivery service that we currently use is Fed Ex. We have negotiated excellent rates with them and we feel that they will provide you, our valued customer, with service that is on par with Arbuckle's high quality standards.

The most commonly used service (and best overall value) is the Express Saver service. By selecting this option, you are guaranteed by Fed Ex that your package will be delivered within 3 business days (once shipped) anywhere in the Continental U.S. In many cases, we have found that our customers packages arrive earlier than anticipated. Our coffee is roasted and shipped fresh daily from our plant in Tucson, Arizona. Depending on where your coffee is going, you might receive it within 1 or 2 business days without paying for a premium delivery service!

We also offer Priority Overnight (by 10:30AM, next business day), Standard Overnight (afternoon delivery, next business day), and 2Day (afternoon delivery, second business day). Q: I have noticed that I can check on the status of my order after I have placed it. Can you give me a brief description of what is going on at each of the stages?

A: If your order is listed as Pending, it has just recently been placed and will soon go into production. When your order is listed as Confirmed, we have begun processing your order and it is currently in production. When your order is listed as Shipped, it has been completed and within a matter of a few days you will be enjoying your fresh Gourmet Coffee, Specialty Tea, or Simply Herbal beverage!

Q: What is the latest time on any particular day that my order will go out?

A: Our Fed Ex pick up time is 3:00 PM, MST (Mountain Standard Time). Any orders placed after that time will be shipped no earlier than the next business day. When estimating how soon your order will arrive, please take the time of day you are placing your order into consideration. If it is after 3PM MST, please add at least one more day to the date provided in the “Estimate Delivery Date” when you choose your shipping method. Remember, this is only an estimate. Our goal is to prepare and ship all orders as soon as we receive them. However, since our product is the freshest available and custom-made to order, there will occasionally be extra time needed to assemble your order.
