Chicory is the tap root of the endive plant and when roasted
and ground produces a strong dark brew, often this roasted
ground root is mixed with ground coffee to add to the flavor
or stretch the yield of the coffee. Root chicory
(Chicorium intybus var. sativum) has been in cultivation in
Europe as a coffee substitute for a long time. It is claimed that
the root contains up to 20% inulin. New strains have been created,
giving root chicory an inulin content comparable to that of sugar beet.
